With a ribbed base to prevent sticking, the lid traps steam and maintains an even temperature to create a thick crispy crust. Please note unglazed terracotta will soak in fats and oils and stain. This is a design feature that improves the non-stick performance of the baker over time. This baker requires seasoning before first use: Fully immerse in warm water and soak for 30 minutes. Dry naturally before applying a coat of vegetable oil to the inside of the base and lid. Place into a cold oven and bake at 200C for 20 minutes until the oil is fully absorbed.
